Bicol Express
- 6 cups coconut milk
- 1 kg. pork, cut into strips
- ¾ cup Shrimp Paste
- 1 tbsp Garlic, minced
- 6 pieces Thai chili pepper
- ½ cup Ginger, grated
- 1 large onion, cubed
- 2 long chili pepper
- 2 tsp cooking oil
- Salt and Pepper
- Sauté the garlic, onion, and ginger
- Add the pork and continue cooking for 5 to 7 minutes
- Place the shrimp paste in and cook for 5 minutes
- Add the Thai and long hot pepper followed by the coconut milk
- Mix all the ingredients well and simmer for 30 to 40 minutes
- Add salt and pepper to taste
