Mix the flaked pork with its sauce to absorb flavor. Let it sit for 10 minutes.
Heat a frying pan and pour-in the olive oil.
When the oil becomes hot, fry the shredded pork in medium heat until the texture becomes crisp.
Turn-off heat then transfer the fried pork in a plate lined with paper towel. This will absorb the oil.
Transfer to a serving plate then serve with sinamak (spiced vinegar).

Beat egg yolks until blended. Combine yolks with condensed milk and vanilla extract in a heavy pot over low heat.
Cook stirring until thick enough to shape into balls. This will take about 30 minutes. Let cool slightly.
Shape into marble-sized balls with buttered hand's. Set aside.
Combine sugar, water, and corn syrup for caramel in a thick saucepan
placed over medium heat and tip pan from side to side until sugar melts
into eight brown syrup (about 12-15 minutes.
Test by dripping syrup into a cup of cold water - it should form into a ball if caramel has reach the right consistency.
Remove from heat Dip each ball into the syrup. Using 2 teaspoons
lift the ball from syrup removing it from teaspoon to teaspoon to let
excess syrup drop off .
Place on greased cookie sheet. Ouickly work on the rest before caramel hardens. Makes about 85 balls.
Combine all ingredients in a saucepan and marinate for 30 minutes.
Simmer and cover tightly for an hour or until meat is tender.
Drain and set aside. Heat cooking oil in a skillet and brown meat on all sides.
Transfer to a serving dish. Pour off all remaining oil from skillet.
Put sauce and cook for a few minutes more. Pour sauce over meat, and serve.
Garnish with tomatoes and parsley. Serve hot. Good for 6 persons.

Cooking Procedures: 1. Heat the cooking oil. Fry the fish until golden brown. Set aside when done and take out excess oil. 2. In a clean cooking pan, saute garlic, onion and ginger. 3. Add the tomato sauce, soy sauce, vinegar, salt, pepper and carrots.
Bring to boil and simmer for 1 minute. Add the red bell pepper and
simmer for 2 minutes. 4. Add the fish and simmer for 2 minutes so that the sauce will soak to the fish meat. Flip on both sides.
